What We Do
We take two homemade cookies and sandwich Blue Bell ice cream between them, creating a delightful treat that will keep you coming back for more. The best part? You choose the cookie & ice cream flavors!
Pokey O's started as a store front in Dallas in 2006. In 2015 Pokey O's opened its first dessert truck in Waco and thus the adventure began! Scott and Ashley Cieri, along with their family, are Waxahachie residents who are committed to making sure your Pokey O's experience is top notch! Their philosophy is pretty simple. They start with fresh baked, made to order, ooey, gooey, cookie & ice cream sandwiches, they combine that with a friendly, professional staff, and that makes a happy customer. The cookie and ice cream combinations are endless and they are quite certain these will become one of your new favorite treats! For Scott and Ashley their customers ALWAYS come first and no request is too crazy for them to try to fulfill. They are committed to giving back to their community, here in Ellis County, by providing an amazing fundraising opportunity. The best part is that they will do all the work!

Are
Scott and Ashley Cieri became the owners of Pokey O's Ellis County in summer 2019. Until that point, Scott had worked as a teacher in Waxahachie ISD for 13 years. He decided to step out of the classroom to take Pokey O's on full-time as scheduler, organizer, ice cream dipper, CFO, and CEO. Ashley works full-time for Waxahachie ISD as the Digital Learning Coordinator in the Curriculum Department, but she loves using her creative side to market and come up with fun new events for Pokey O's to attend in her free time. They have three children, Kamden, Adaline, and Graham, who all think they should get cookies and ice cream at any time of day or night! Both Scott and Ashley love to travel. They are heavily involved in the local community through the school district, Waxahachie Junior Service League (Ashley), the Waxahachie Community Theatre (where they have both performed), and Oaks Church, where they serve in the Children's Ministry.
